My introduction to pasta with salmon was some 20 years ago in Rome, during my first visit to Italy. To say that it left a lasting impression would be a gross understatement. We were simple folk back then. Duplicating a recipe meant that I had to keep trying until I got it right. Sadly, I never did get it quite right, although things may have gone differently had I remembered to record the ingredients and their amounts from one test to the next. Anyway, the sauce would inevitably be too runny or too thick and the flavor either too bland, too strong, or just plain wrong. Then, one day in my favorite Greek market, I noticed a small container of salmon pieces packed in oil.

Cooking: mins Difficulty: Easy. It translates as pennette pasta with smoked salmon and vodka. There are a few versions of the recipe; some people like to add some halved cherry tomatoes into the sauce, at the very end, and others like to garnish the dish with different herbs. I personally like the minimalist version of the recipe, without tomatoes, and the only herb I use is parsley. A little word of advice; this is a dish to be served quickly, when it is still piping hot, because the sauce has the tendency to dry quickly because of the cream. I will never, ever stop claiming that the simplest dishes are the best. They all have one thing in common: their taste is beyond belief but they are made with no more than three ingredients, give or take. It is the principle of genuine Italian cooking: a few simple, fresh ingredients. This is partly why I always roll my eyes when I see recipes that contain endless lists of ingredients. So why this long tangent, again, Mariacristina? How can you be so damn good?
